Dulce de leche Ice Cream Recipe:
In a heavy-bottom saucepan, combine the milk, cream and water.
Place over medium-low heat and cook., stirring occasionally so a skin doesn't form, until tiny bubbles start to form around the edges and the mixture reaches a temperature of 170 F.
Meanwhile, in a medium heat-proof bowl, whisk the egg yolks until smooth. Gradually whisk the Nuuva Ice Cream Base dulce de leche until the mixture is homogeneous
Temper the egg yolks by very slowly pouring the hot milk mixture while whisking it continuously.
Return the custard to the saucepan and place over a low heat. Cook, stirring frequently with a wooden spoon, until custard is thick enough to coat the back of the spoon, and reaches 185F.
Pour the mixture into a bowl and stir every five minutes until it gets to room temperature.
Ready to pour in your ice cream machine and make your gelato.

Oreo Caramel Cheese Pie:
In a glass tray lay a base of coffee soaked oreo cookies or similar.
Mix 2 lbs of cream cheese with 1lb of Nuuva Ice Cream Base dulce de leche.
